Spring Tuna Salad

INGREDIENTS:


  • 1/4 cups finely chopped red onion
  • 3 (5-ounce) cans solid white tuna in water
  • 1 celery rib, minced
  • 2 hard-boiled eggs, finely chopped
  • 2 trimmed, halved, and thinly sliced radishes
  • 1/4 cup capers, drained
  • 1/3 cup mayonnaise
  • 2 teaspoons lemon juice
  • salt and pepper to taste

INSTRUCTIONS:


  1. Combine all ingredients together until well combined.
  2. Season with salt and pepper to taste. Serve (Salad can be refrigerated for up to 24 hours).
