INGREDIENTS:
- 1 egg
- 2 Tablespoons ketchup
- 2 Tablespoons mustard
- 1/2 cup quick oats or crushed cornflakes
- 2 Tablespoons dry onion soup mix
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 lb. ground beef
- 1/4 cup sugar
- 2 Tablespoons brown sugar
- 2 Tablespoons apple cider or regular vinegar
- 3 Tablespoons ketchup
- In a large bowl, combine first 7 ingredients; mix well.
- Crumble beef over mixture and mix until well combined.
- Press into a greased 2 qt. microwave safe dish or loaf pan.
- Microwave on high for 13-15 minutes or until meat is no longer pink; drain grease.
- In a large measuring cup, whisk together sauce ingredients.
- Pour over meatloaf. Microwave an additional 3 minutes. Serve!
