Steak With Bamboo Shoots In Oyster Sauce Recipe




INGREDIENTS:
  • 500g rump steak
  • 1 can bamboo shoots
  • 2 garlic cloves, finely chopped
  • 1 inch of ginger, finely chopped
  • 2 red chillies finely chopped
  • 1 red pepper, finely sliced
  • 1 carrot,finely sliced
  • A small can of straw mushrooms
  • A couple of spring onions, chopped roughly
  • 2 spring onions, finely sliced
  • A large glug of groundnut oil

For the marinade
  • 1 tbsp light soy sauce
  • 2 tbsp of rice wine
  • A pinch of sugar
  • A pinch of freshly ground black pepper
  • A splash of ground nut oil
  • 2 tsp of cornflower

For the sauce
  • 2 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 2 tbsp water
Steak With Bamboo Shoots In Oyster Sauce Recipe


INSTRUCTIONS:
  1. Tenderise the steak with a steak hammer or rolling-pin. then slice the beef into thin slices. Cutting the slices thinly will ensure quick cooking.
  2. Place the beef in a bowl and then add all the ingredients for the marinade. 
  3. Mix thoroughly ensuring that the cornflower is absorbed. Leave to marinade for 45 minutes. Whilst the beef does its thing, prep all the vegetables so everything is ready for the wok. 
  4. Mix the oyster, soy and water together in a bowl and set to one side.Heat the wok over a high heat. 
  5. Add the groundnut oil. When the oil is hot, add half the garlic. Stir-fry for about ten seconds and add the beef in batches ensuring each batch is browned.
  6.  Place all the browned beef in a bowl and set aside. Wipe the wok out with a damp cloth and place back on the heat. 
  7. Add more oil and once hot, add the remaining garlic, chilli and ginger and stir fry for 10 seconds before adding the vegetables and bamboo shoots. Stir-fry for a couple of minutes before adding the sauce. 
  8. Bring to the boil then add the beef and spring onions, stir frying for a couple more minutes before serving immediately with
