Smoked Mackerel, Broccoli And Plantain Stir-Fry – Sierra Leone Flavours Recipe


INGREDIENTS

For the stir-fry sauce

4 tbsp oyster sauce
2 tbsp Tamari soy sauce
1 tsp roasted sesame oil

For the stir-fry

1 plantain

Oil for frying
250g (9oz) broccoli cut into even sized florets
200g (7oz) smoked mackerel shredded
2 spring onions (scallions) sliced
To serve rice and toasted sesame seeds

DIRECTIONS

  1. Mix the ingredients of the stir fry sauce together and set aside.
  2. Peel the plantain and cut into slices.
  3. Heat the oil in a frying pan and fry the plantain slices for about 2-3 mins on each side until golden brown and cooked through. You might need to do this in two batches.
  4. Whilst the plantain slices are cooking steam the broccoli for about 7 mins or until you get the softness you desire and set aside.
  5. Heat a tsp of oil in the wok and add the spring onions and stir fry for a min.
  6. Then add in as much of the stir-fry sauce as you like, cook for a min before adding in the fried plantain, broccoli and smoked mackerel and stir fry for another min.
  7. Serve warm with some rice and toasted sesame seeds.
