INGREDIENTS:
- 1 cup corn meal
- 1/2 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 3 green onions, thinly sliced whites and greens
- 5 slices thick cut bacon, cooked crisp and chopped
- 12 ounces lump crab meat, picked clean
- 1 egg, lightly beaten
- 3/4 cup beer
INSTRUCTIONS:
- Stir together cornmeal mix, flour, baking powder, salt, pepper, garlic powder, cayenne, and green onions in a large bowl
- Stir in crab meat, egg, bacon, and beer until just moistened. Cover and place in the refrigerator for at least 10 minutes.
- Pour oil to depth of 2 inches into a Dutch oven; heat to 360°.
- Drop batter by tablespoonfuls into hot oil, and fry, in batches, 2 to 3 minutes or until golden brown, turning once.
- Serve with your favorite rémoulade or tartar sauce.
