INGREDIENTS:
- 2 large boneless chicken breasts
- 3 carrots, chopped
- 3 celery, chopped
- 1/2 onion peeled and left intact or chopped if everyone loves them
- 1 chicken bouillon cube
- 8 cups chicken stock
- cooked noodles or rice - optional
INSTRUCTIONS:
- Place the chicken and chopped vegetables and onion in the slow cooker.
- Add the chicken cube and stock.
- Cover the slow cooker and place on low for 6 hours.
- Remove the onion, if not using, and discard.
- Remove the chicken into a small bowl and shred with two forks.
- Add the shredded chicken back into the soup and serve as is or add cooked noodles or rice.
