Beetroot Coconut Soup

Ingredients:

  •   1000 gr beetroot 
  •   400 ml coconut milk
  •   4 tsp coconut oil
  •   8 pinches of dried lemon grass powder
  •   4 pieces of star anise
  •   1 fresh red peppers
  •   2tbs sea salt

Preparation:

  1. Juice the beetroot. This amount will become 400ml of juice.
  2. Mix juice and coconut milk.
  3. Heat coconut oil in skillet and add lemon grass powder. Fry for a minute or so. Add beetroot juice and coconut milk.
  4. Cut red peppers into small strips. Add star anise and red pepper to soup. Place on medium low heat for 7 minutes or so. Season with sea salt.
