Ingredients:
- 1000 gr beetroot
- 400 ml coconut milk
- 4 tsp coconut oil
- 8 pinches of dried lemon grass powder
- 4 pieces of star anise
- 1 fresh red peppers
- 2tbs sea salt
Preparation:
- Juice the beetroot. This amount will become 400ml of juice.
- Mix juice and coconut milk.
- Heat coconut oil in skillet and add lemon grass powder. Fry for a minute or so. Add beetroot juice and coconut milk.
- Cut red peppers into small strips. Add star anise and red pepper to soup. Place on medium low heat for 7 minutes or so. Season with sea salt.
