Roasted Corn and Mango Relish

Ingredients

  •   2 ears Corn on the cob, husks still on
  •   2 Mangoes, peeled and finely diced
  •   1 small Red onion, finely diced
  •   1 Jalapeno, seeds removed, finely diced
  •   Juice of 1 Lime
  •   2 T Cilantro, freshly chopped
  •   ¼-1/2 tsp salt (or to taste)

Instructions

  1. Preheat oven to 350.
  2. Place corn (still in husks) directly on grates in oven and roast for 30 minutes. Allow to cool before removing silks and husks.
  3. Carefully, run a sharp knife down the sides of the cob to remove the corn kernels. Place in bowl.
  4. Add mango, red onion, jalapeno, lime juice, cilantro and salt (start with less salt and add more to taste as needed). Stir to combine. Refrigerate until needed.
  5. I also enjoyed this straight out of the bowl with tortilla chips
