Spinach with Sesame Sauce


Ingredients:


  •   1 bunch spinach
  •   3 tablespoons roasted sesame seeds
  •   1 tablespoon soy sauce
  •   1/2 tablespoon sugar


Procedure:

  1. Grind your toasted sesame seeds with a mortar and pestle or in a suribachi.
  2. Mix in the soy sauce and sugar and stir to combine.
  3. Bring a large pot of water to a boil, then add the spinach. Cook until just wilted, about 3 minutes.
  4. Immediately transfer the spinach to a colander and rinse with cold water to prevent further cooking.
  5. Drain the spinach and gently squeeze out as much water as you can. Transfer the spinach to a cutting board, and cut into 2 inch strips.
  6. Mix the spinach with the sauce, then serve at room temperature or chilled.
