Ingredients:
- 1 bunch spinach
- 3 tablespoons roasted sesame seeds
- 1 tablespoon soy sauce
- 1/2 tablespoon sugar
Procedure:
- Grind your toasted sesame seeds with a mortar and pestle or in a suribachi.
- Mix in the soy sauce and sugar and stir to combine.
- Bring a large pot of water to a boil, then add the spinach. Cook until just wilted, about 3 minutes.
- Immediately transfer the spinach to a colander and rinse with cold water to prevent further cooking.
- Drain the spinach and gently squeeze out as much water as you can. Transfer the spinach to a cutting board, and cut into 2 inch strips.
- Mix the spinach with the sauce, then serve at room temperature or chilled.
