INGREDIENTS:
For Nuggets:
- Breast of 1 whole chicken, deboned
- 2 tablespoons soy sauce
- 1 tablespoon calamansi juice
- 1/8 teaspoon pepper
- All purpose flour
- 2 eggs, slightly beaten
- Breadcrumbs
- Cooking oil
For Dipping Sauce:
- ½ cup mayonnaise
- 1 teaspoon minced garlic
- 1 teaspoon mustard
- 2 to 3 dashes Worcestershire sauce
- Salt and pepper to taste
INSTRUCTIONS:
- Tenderize chicken breast by pounding with a mallet or the back a knife or by rolling meat tenderizer over it. Combine soy sauce, calamansi juice and pepper and marinate chicken for about 30 minutes.
- Cut chicken breast into rectangualar pieces about 1 ½ by 1 inch.
- Coat each piece with flour.
- Dip each piece in eggs then inbreadcrumbs. Make sure the coating is even but not too thick.
- Heat cooking oil in frying pan. Deep fry chicken until golden brown. Serve with dipping sauce.
To Make the dipping Sauce:
- Mix together mayonnaise, garlic, mustard and Worcestershire sauce. Season with salt and pepper to taste.
