INGREDIENTS:
- 1 pound ground turkey (beef or chicken would work as well)
- 1/2 cup oats, roughly ground (I stuck in the blender for a few seconds)
- 2 eggs, whipped
- 1/2 onion, finely chopped
- 1 tsp salt
- 1/2 tsp pepper
- 2 Tbsp chopped fresh parsley
- 1 cup apple juice
- 1/4 cup liquid aminos (soy sauce or tamari can be substituted)
- 2 Tbsp coconut sugar
- 1 Tbsp arrowroot powder
- Preheat the oven to 350 degrees
- Combine all of the ingredients for the meatballs in a large bowl
- Roll into 20 balls and place on a baking sheet lined with parchment paper
- Bake for 25-35 minutes or until cooked through
- While the meatballs are baking combine all the ingredients for the sauce in a small bowl
- Add to a medium sized sauce pan over medium heat
- Allow to come to a boil while stirring frequently
- Reduce the heat and allow to reduce and thicken and then remove from heat
- Once the meatballs are done, coat them with the sauce and serve
