Stuffed Bell Peppers Recipe


INGREDIENTS:

  • 8 small bell peppers (multicolored is nice)
  • 1/2 onion , chopped
  • 1 lb ground beef
  • 1 cup egg plant
  • 3/4 cup Ricotta Cheese
  • 2 cups marinara Sauce
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt
  • pepper
  • 4 ounces mozzarella cheese (thin sliced)

INSTRUCTIONS:

  1. Start the oven heating to 350 degrees and place your peppers (cleaned, cut in half and seeds removed) in the oven covered with the water in the bottom of the pan.
  2. Steam for 20 minutes, while your oven preheats.
  3. Saute the onion with the ground beef and dried spices.
  4. Once the meat is half-browned, add in your 1 cup of egg plant
  5. Once meat is browned, add in 1 cup of marinara sauce and the ricotta cheese.
  6. Remove your par-cooked peppers from the pan and add in the remaining cup of of sauce.
  7. Stuff your peppers with the meat mixture and return to the 9X13 dish.
  8. Bake uncovered for 25 minutes.
  9. Remove from oven and top with sliced cheese.
  10. Broil for 3-5 minutes, or until browned and bubbly.
  11. Enjoy!
Note: You can serve alongside pasta like spaghetti.
