INGREDIENTS:
- P4 boneless, skinless chicken breasts cut into 1 inch pieces
- 1/2 cup of melted butter
- 1 cup of finely crushed butter crackers such at Ritz
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of finely chopped pecans, optional
- 1/2 teaspoon of seasoned salt
- 1 teaspoon of dried thyme
- 1 teaspoon of dried basil
- 1/2 teaspoon of freshly ground pepper
INSTRUCTIONS:
- Preheat oven to 400 degrees F
- Mix together all of the dry ingredients in a large pie plate
- Place the melted butter into a second pie plate
- Dip the chicken pieces into the butter and then into the cracker mixture and place on a baking sheet. Repeat until the batch is all coated with the butter and the cracker mixture.
- Place the baking sheet into the oven and bake 20 to 25 minutes or until golden brown
- Serve as a main course with sides of choice or serve as an appetizer with your favorite dipping sauces
