INGREDIENTS:
- 150 ml fresh tomato juice (or passata)
- a few drops of tabasco
- 3 large garlic cloves
- 3 ½ cup of plain flour
- 125 g butter or margarine
- 30 ml oil
- 3 egg yolks
- ½ cup of milk
- 200 g cheese, shredded
- 100 g spiced peanuts, chopped
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 tablespoon of butter
- ½ teaspoon of baking powder
- ½ teaspoon of baking soda
INSTRUCTIONS:
- Press the garlic and fry a bit with a tablespoon of butter. Add the tomato paste, salt, sugar and tabasco. Fry until it thickens and reduces to half the amount. Set aside to cool down.
- Place all remaining ingredients in a large bowl. Add cold tomato mixture and knead the dough. Put it in a fridge for about half an hour. In the meantime preheat the oven to 180°C.
- Form your cookies and place them on a paper-lined baking tray. Bake for 18 minutes, until the tops are nicely browned. Enjoy!
