INGREDIENTS:
- 1 (20 ounce) package cheese tortellini
- 1 tablespoon olive oil
- 1 and ½ teaspoons smoked paprika
- ¼ teaspoon crushed red pepper
- 1 cup halved grape tomatoes
- fresh Parmesan cheese (can substitute grated, if needed)
INSTRUCTIONS:
- Boil water, then add the tortellini and cook for about 5 minutes. Drain and set aside.
- Heat the olive oil with the paprika and crushed red pepper.
- Add the tortellini and saute until the pasta is coated and has slightly browned, about 5-6 minutes.
- Add tomatoes and heat for about 2 more minutes.
- Serve with freshly grated Parmesan cheese.
