INGREDIENTS:
4-5 ripe tomatoes, the insides scooped
5 hard boiled eggs
200g/7oz feta cheese
100g/3.5oz light mayo
a bunch of fresh parsley, chopped
1 tbsp lemon juice
salt and pepper
INSTRUCTIONS:
1. In a bowl, combine the ingredients for the tomatoes's filling.
2. Mash the mixture to a thick consistency.
3. Stuff the tomatoes and cover with their lids.
4. Serve chilled!
