INGREDIENTS
5-7 oz. fresh baby spinach
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
2 T butter, melted
1 small onion, chopped
1/4 C low fat cottage cheese, blended
1/4 C shredded cheese
ground pepper to taste
DIRECTIONS
- Preheat oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
- Sautée onion in a large skillet over medium heat until golden and translucent, 5-7 minutes. Add the spinach to pan and cook and stir until well wilted. Set aside.
- In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk, butter and pepper. Mix in spinach, onion and cheeses.
- Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Serve warm or room temperature.
