Spinach Squares Recipe


INGREDIENTS

5-7 oz. fresh baby spinach
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
2 T butter, melted
1 small onion, chopped
1/4 C low fat cottage cheese, blended
1/4 C shredded cheese
ground pepper to taste

DIRECTIONS

  1. Preheat oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Sautée onion in a large skillet over medium heat until golden and translucent, 5-7 minutes. Add the spinach to pan and cook and stir until well wilted. Set aside.
  3. In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk, butter and pepper. Mix in spinach, onion and cheeses.
  4. Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Serve warm or room temperature.
