INGREDIENTS:
- 8oz fresh noodles (you can use the wider ones)
- 1 middle size sweet potatoes
- 1/2 middle size purple sweet potatoes
- 2 teaspoons cooking oil
- 3 cloves garlic chopped
- 1 teaspoon chopped white part of spring onion
- water as needed
- 2 teaspoons salt
- 1 teaspoon sesame oil
- 1/2 tablespoon light soy sauce
- 1 teaspoon finely chopped spring onion for garnish
INSTRUCTIONS:
- Peel and cut sweet potatoes and purple sweet potatoes in small cubes. And also finely cut both the white part and green part of spring onions.
- Heat up cooking oil in pan. Add chopped garlic and white part of spring onions in to stir-fry until you can smell the aroma.
- Add sweet potatoes cubes in and mix well.
- Pour enough water in pan, you need to cover all the sweet potato cubes and simmer for around 5 minutes with the pan covered.
- Add fresh noodles in. Mix welly with the sweet potato cubes and simmer until the water added are almost gone.
- Add salt, sesame oil and light soy sauce. Mix well.
- Transfer the noodles out from pan to serving bowl and garnish some chopped spring onions on top.
