INGREDIENTS:
- 4 slices bacon
- 1/4 c mozzarella, shredded or sliced
- 3/4 c cheddar, shredded or sliced
- 8 slices oat whole wheat bread
- butter
- 2 tsp dijon mustard
- 3 tbsp BBQ sauce
- 2 tbsp mayonnaise
INSTRUCTIONS:
- Butter one side of each bread slice. Mix mustard, bbq and mayo in a small bowl. Spread 1 tbsp of mayo-mustard mixture on the non-buttered sides of 4 bread slices. Top with bacon and cheese and remaining bread slices, making sure buttered sides are facing up.
- Melt 1 tbsp butter in a skillet on medium heat. Add buttered sandwiches and press down on sandwiches. Once cheese begins to melt, flip sandwiches over and press down again.*
*A cast iron skillet is perfect for pressing sandwiches down.
