Red Breakfast Potatoes Recipe


INGREDIENTS:

  • 2 pounds red potatoes, cubed
  • 1 small to medium bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 2 teaspoons dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oil

INSTRUCTIONS:

  1. Heat oil in a large frying pan. Add all ingredients to hot oil. Cover and cook over medium heat for 7-10 minutes until potatoes are soft but still firm.
  2. Stir. Uncover and cook for 5 minutes more stirring occasionally.
