INGREDIENTS:
- 1 package soba noodles
- 1 red pepper, julienned
- 2 carrots, peeled and julienned
- 1 tsp coconut oil
- 1/4 cup natural peanut butter
- 2 Tbsp rice vinegar
- 2 Tbsp lime juice (approx 1 lime juiced)
- 1/2 Tbsp liquid aminos (soy sauce or tamari works as well)
- 1 packet stevia
- 1-2 tsp Sriracha
- 1 tsp fish sauce
INSTRUCTIONS:
- Add the coconut oil to a large skillet over medium heat
- Saute the carrots and pepper in the coconut oil until tender crisp
- Cook the Soba noodles according to package directions
- In a separate bowl combine the peanut butter, rice vinegar, lime juice, liquid aminos, stevia, sriacha, and fish sauce until smooth
- Combine the noodles, peanut sauce, carrots, and peppers in a large bowl and toss to until evenly coated
- Garnish with fresh cilantro
Notes:
Grilled chicken taste great with this meal for a little bit of added protein.
Peppers and carrots are just suggested vegetables, you can use whatever you have on hand.
