INGREDIENTS:
- 2 pounds stew meat
- 3 Tbsp olive oil
- 1 Tbsp salt (divided)
- 1 tsp black pepper (divided)
- 2-3 bay leaves
- 1 onion
- 4 cloves garlic
- 1 cup chickpeas
- 1 cup tomato sauce
- 1 green Bell Pepper
- 2 carrots (1 cup)
- 2 Tbsp dried thyme
- 1 tsp paprika
INSTRUCTIONS:
- Over medium heat braze the meat for 3-5 minutes each side in 3 Tbsp of olive oil adding half of the salt and pepper. Brazing is the key to the best stew and will give the nice caramelized flavor.
- In the meanwhile chop the onions and garlic, carrots and bell pepper (you can peel the pepper for the stew).
- Add them to the meat and brown a little. You can also use celery or any other vegetables you like.
- Add a cup of tomato sauce, 1 cup of chickpeas (if you are using canned add them 20 minutes before turning the heat off), and season with thyme, bay leaves, the remaining half of the salt and pepper and paprika.
- Bring the temperature down, put the lid on and simmer for 2-3 hours.
