Longganisa Fried Rice Recipe


INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 5 cups cooked rice
  • 11/2 cups crumbled longganisa, cooked until browned 
  • 2 teaspoons vinegar
  • Salt, to taste
  • 1/2 cup chopped onions
  • 1 cup chopped tomatoes
  • 3 salted eggs, diced

INSTRUCTIONS:

  1. Heat oil in a wok or pan. Add garlic and sauté until fragrant but not brown. Add rice and longganisa. Toss to mix well. Drizzle with vinegar and season to taste.
  2. Transfer to a serving bowl and top with onions, tomatoes, and salted egg.
