INGREDIENTS:
- 2 tilapia filets
- 1 T butter
- 1 tsp curry
- 1 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp salt
- Lemon
Yogurt Sauce:
- 1/4 c yogurt
- 1/4 tsp curry
- 1/4 tsp cumin
- 1/8 tsp coriander
- dash salt
- cilantro, garnish
- lemon wedges, garnish
INSTRUCTIONS:
- In a small bowl, mix curry, cumin, coriander and salt together. Rub mixture on filets. Heat butter on medium-high until melted then add filets. Turn heat to medium and sauté fish 4 minutes on each side or until cooked through. Remove from heat and squeeze a dash of lemon over top or to taste.
- In a separate bowl, mix together yogurt, curry, cumin, coriander and salt. Serve yogurt sauce over fish. Garnish with cilantro and lemon.
- Transfer to a plate, and let it rest for 3 minutes. Meanwhile, repeat with the remaining chicken breasts.
