Chili Rubbed Pork Loin with Apple Salsa (Gluten Free)

INGREDIENTS:

  •   1 package McCormick Gluten-Free Chili Seasoning Mix
  •   1 tablespoon brown sugar
  •   1 apple, diced
  •   ¼ cup finely chopped red onion
  •   ¼ cup fresh cranberries, halved
  •   1 tablespoon honey
  •   1 lime, juiced
  •   1 tablespoon freshly chopped cilantro
  •   2 pork tenderloins (1 pound each)
  •   1 tablespoon oil

INSTRUCTIONS:

  1. In a small bowl, combine chili seasoning mix and sugar. In a medium bowl, mix the apple, cranberries, onion, honey, lime juice, cilantro and 1 teaspoon of the seasoning mixture. Cover and refrigerate until ready to serve.
  2. Brush pork tenderloins with oil. Coat evenly with remaining seasoning mixture.
  3. Heat oven to 400ºF.
  4. Place the pork tenderloins on a foil-lined baking sheet lined. Bake for 20-25 minutes, or until the pork reaches an internal temperature of 145ºF. Remove from oven and let rest for at least 5 minutes.
  5. Serve with apple salsa.
