Tofu & Mushroom Donburi

INGREDIENTS:


  •    1/2 block tofu
  •   1/4 onion
  •   1 clove garlic, minced
  •   1/2 cup fresh mushrooms
  •   1/4 cup fresh spinach
  •   1 tablespoon oil
  •   2 tablespoons soy sauce
  •   2 tablespoons sugar
  •   1/3 cup dashi
  •   1 egg
  •   1.5 cups cooked rice
INSTRUCTIONS:
  1.  Cut your onion in half vertically, then cut each half into long slices lengthwise.
  2.  Cut your tofu into large cubes then roll in a paper towel to remove excess water. Chop the spinach into small chunks, and cut your mushrooms into smaller pieces.
  3.  Whisk the egg until blended in a small bowl, then whisk in the dashi, sugar, and soy sauce. Set aside for later.
  4. Heat the oil in a wide skillet over medium heat. Once hot, add the onion and garlic and let cook until translucent, about 7 minutes.
  5. Add the tofu and mushrooms and cook for another 5 minutes, stirring occasionally.
  6. Add the egg mixture and spinach to the pan, then cover with a tight fitting lid. Cook for 2 to 3 minutes until the egg has just set, then it’s ready to eat!
  7.  Divide the mixture over two bowls of hot rice, and top with green onion if desired.
