INGREDIENTS:
- 1 pound unripe jackfruit ( you can buy from supermarkets: peeled, seeded and sliced)
- 2 cups coconut milk
- 1/2 pound pork
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 green chili finger
- 1 tablespoon bagoong
- 3/4 teaspoon salt to taste(just add to your taste preference)
- 1/4 teaspoon black ground pepper
- 1 red siling labuyo (Thai chili) , seeded and chopped (optional)
PROCEDURE:
- Saute garlic and onion until it browned in a wok over medium high heat.
- Add the pork, continuously stirring the mixture until cook.
- Add the unripe jackfruit, salt, bagoong, black ground pepper, coconut milk and chili finger.
- Lower heat to medium and simmer for 15 to 20 minutes or until unripe jackfruit totally cook and the liquid almost dries up.
