Super Crispy, Cheesy, Tacos

Ingredients

  •   Ground beef
  •   Your favorite taco seasoning
  •   Cooking spray
  •   Corn tortillas
  •   Grated Colby-Jack cheese
  •   Hot sauce
  •   Shredded lettuce
  •   Sour cream OR Greek yogurt

Instructions

  1. Cook your ground beef with the taco seasoning and any other additions you like. Set aside.
  2. Meanwhile, lightly grease a flat griddle pan or a nonstick skillet with cooking spray, and set it over high heat.
  3. Place a corn tortilla (Or more than one if you have room for it.) on the skillet and heat for approximately 30 seconds.
  4. Sprinkle the grated cheese around the perimeter of the tortilla, allowing some to touch the skillet. You'll have to keep an eye on it, but as the cheese melts and bubbles, it will begin to crisp. Once it's crisp enough to move (This should take a minute or two.), gently lift it using a spatula. You can either remove it from the skillet at this point, or add your meat and hot sauce and cook it for an additional minute. In my opinion, it's much easier to remove the tortilla and add the rest of the fillings off of the skillet.
  5. Finish with toppings, and serve immediately.
