Ginataang Galunggong (Scad Fish in Coconut Milk)

INGREDIENTS:

  • 1/2 kilo galunggong (scad)
  • 1/4 cup water
  • 1/2 cup vinegar
  • 1 1/2 cup coconut cream
  • 1 tablespoon minched ginger
  • 1 onion (small size)
  • 2 pcs. crushed garlic
  • 2 pcs. eggplant 
  • 1 pc. siling labuyo
  • magic sarap 
  • salt to taste
INSTRUCTIONS:
1. Put the clean round scad (galunggong) in pan.
2. Add water, vinegar, ginger, onion, garlic, eggplant, salt and pepper.
3. Boil for 5 minutes then add coconut cream. Stir gently so the cream would not curdle.
4. Cover the pan and lower heat. Cook for 10 minutes or until sauce thickens.
