INGREDIENTS:
- 1/2 kilo galunggong (scad)
- 1/4 cup water
- 1/2 cup vinegar
- 1 1/2 cup coconut cream
- 1 tablespoon minched ginger
- 1 onion (small size)
- 2 pcs. crushed garlic
- 2 pcs. eggplant
- 1 pc. siling labuyo
- magic sarap
- salt to taste
1. Put the clean round scad (galunggong) in pan.
2. Add water, vinegar, ginger, onion, garlic, eggplant, salt and pepper.
3. Boil for 5 minutes then add coconut cream. Stir gently so the cream would not curdle.
4. Cover the pan and lower heat. Cook for 10 minutes or until sauce thickens.
