- 800g pork ribs
- 4-5 garlic cloves
- 1-2 slices ginger
- 2 red finger chillies
- 2 tbsp fermented black beans
- For garnish
- Spring onion
- Sliced red chilli
- Seasoning
- 2 tsp fermented soya beans
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 1 tbsp sugar
- 1 tbsp cornstarch
- 1 tbsp ketchup
INSTRUCTIONS:
- Cut the pork ribs into bite-sized pieces.
- Boil water and blanch the pork until there is no visible blood.
- Rinse the pork and set aside to cool.
- Chop the garlic, chilli and ginger. Then add the fermented black beans to the mix and chop coarsely.
- Add the chopped mixture to the pork in a large bowl and add the seasoning.
- Wearing a disposable glove, mix the marinade thoroughly and massage into the meat.
- Cover the meat and let it marinate refrigerated for an hour.
- Bring water to boil in a covered pot or wok.
- Steam the pork over medium heat for 45 minutes.
- Garnish with spring onion and chilli.
- Serve hot.
