INGREDIENTS:
- 1/2 cup packed fresh parsley
- 1/4 cup extra virgin olive oil
- 2 T red wine vinegar
- 1 T lemon juice
- 1 T (heaping) minced garlic
- 1/8 tsp cayenne pepper
- 1/4 tsp salt
- 1/4 tsp fresh ground pepper
- 1 1/2 pound flank steak (preferably grass fed)
- salt and pepper
INSTRUCTIONS:
- Chimichurri Sauce
- Combine all ingredients into a mini food processor (or blender)
- Process until sauce is formed
- Flank Steak
- Season the steak with salt and pepper
- Place on grill set to medium/high heat
- Grill 5-6 minutes and flip, grill another 5-6 minutes for a medium rare meat (I cooked mine longer)
- Remove from grill and let sit for 5 minutes before cutting
