- banana - 1 ripe, mashed
- peanut butter - 2 tbsp (crunchy peanut butter)
- cocoa powder - approx 32 g
- vanilla extract - ½ - 1 tsp (I used 1 tsp of good vanilla extract)
- baking powder - ½ tsp
- salt - ½ tsp
- pre-heat the oven to 180 deg C
- in a bowl, mix flour, sugar, baking powder, cocoa powder, salt
- in another bowl mash up a ripe banana using a fork. add peanut butter, vanilla extract, oil,. mix well. add this onto the flour mixture, add water. mix everything well
- spread evenly onto a 9X13 inch baking tin (23X33 cm) and give it a gentle tap
- sprinkle over chocolate chips (optional) (or nuts)
- bake for 25 - 30 min or until the top is no longer shiny. keep an eye on it. don't let it burn. we are looking for a crunchy surface
- allow it to cool completely. then cut and serve.
- you can add nuts, seeds whatever you fancy into the batter and bake.
- keep an eye on them the last few minutes, take it out once the top stiffens. don't allow them to burn.
- allow it to cool completely before you cut.
- if you like thicker brownies, just double the quantity of all the ingredients.
- store them in an air-tight container with a piece of greaseproof between each brownie. as with all baked goods, brownies too are best when eaten as soon as they are baked.
- however if you wish to freeze them - wrap each piece in multiple layers of cling wrap and lock them in zip-lock bags, freeze
