INGREDIENTS:
- 4 Fish Fillets (I used haddock)
- 175g Potatoes chopped in cubes
- 1 chopped onion
- 2 celery sticks chopped
- 1 can of chopped tomatoes
- 3 cloves of garlic
- 2 bay leaves
- 250ml Vegetable stock
- 10g chopped Fresh parsley
- 1 tea spoon cayenne pepper
- 10g chopped fresh dill
- Juice of 1/2 a lemon
- Salt to taste
INSTRUCTIONS:
- Heat oil in a saucepan. Add onions and celery and cook for about 5 minutes. Add tomatoes, garlic, potatoes and bay leaf, cayenne pepper and cook for 5-7 minutes. Add the vegetable stock and simmer for 10 minutes.
- Add fish, 1/2 of the fresh herbs and simmer until fish is cooked.
- Check seasoning.
- Serve with a good squizze of the lemon and the rest of the chopped herbs.
