INGREDIENTS:
- 3 lbs. catfish fillets
- 1 cup cornmeal
- 1 tsp. paprika
- 1/4 tsp. dry mustard
- 1/2 tsp. onion powder
- 1/2 tsp. celery salt
- 1 Tbsp. lemon zest
- slat and pepper to taste
- 1/2 cup milk
INSTRUCTIONS:
- In a mixing bowl combine cornmeal, paprika, dry mustard, onion powder, celery salt, lemon zest, salt, and pepper.
- Dredge the catfish in the milk, then the cornmeal mixture. In a large frying pan, heat with oil. Place catfish in the pan. Cook fish until browned on both side. You can garnish the fish with thinly cut lemon slices.
