- 6 Large Chicken Fillets
- Salt and Black Pepper, to taste
- 1/2 t Ground Cumin
- 1 Onion, finely chopped
- 3 t Fresh Garlic, crushed
- 1 Red Bell Pepper, finely cubed
- 1 Green Bell Pepper, finely cubed
- 1/2 cup Mayonnaise
- 1/2 cup Yogurt, plain
- 1/2 cup Sweet Chili Sauce
- 1/4 cup Cilantro, chopped
INSTRUCTIONS:
- Pre-heat the oven to 180 deg C (350 deg F) - spray a large oven dish with cooking oil.
- Season the Chicken with Salt, Pepper and the Cumin - arrange in a single layer in the oven dish.
- Mix together the Onion, Garlic, Red- and Green Bell Peppers - sprinkle over the Chicken.
- Whisk together the Mayonnaise, Yogurt, Chili Sauce and Cilantro - pour over the Onion mixture.
- cover with aluminum foil and bake 40 - 45 minutes {remove the foil after 20 minutes} or until fully cooked.
