INGREDIENTS:
- 1 chicken breast
- 1 egg
- 1/2 cup plain flour
- 1 cup panko crumbs
- (This made 15 or so strips. Just adjust your quantities according to your appetite!)
- 3 tbsp whole egg mayonnaise
- 2 tsp coriander paste
- 1/2 tsp lemongrass paste
- 1/2 tsp minced ginger
- 1 tbsp lime juice
INSTRUCTIONS:
- Using a sharp knife slice the chicken breast through horizontally so you end up with three thinner portions. use a meat tenderiser or the bottom of a small frypan to bash the chicken out quite thinly.
- Put the four in a shallow dish and season with salt and pepper. Whisk the egg in a similar sized dish. Choose a third dish and put the panko crumbs in that. Line the dishes up in order and follow the sequence to crumb the chicken - dredge in flour, shake off the excess, dip in egg then roll in panko crumbs.
- Add some vegetable oil to a large frypan over a l high heat. Quickly fry the chicken strips and drain on paper towel.
- They will cook quickly because they are nice and thin. Keep warm in the oven if you like. To make the mayonnaise simply combine the ingredients and mix well.
