Potato Salad Recipe







INGREDIENTS:

  • 8 medium potatoes (about 3 pounds), 
  • scrubbed and cut into 1-inch chunks
  • 1 tablespoon salt
  • 1 (16-ounce) container sour cream
  • 1/4 cup real bacon bits
  • 4 scallions (green onions), thinly sliced
  • 1/2 teaspoon black pepper

INSTRUCTIONS:

  1. Place potatoes in a large pot and add enough water to cover them. 
  2. Add salt and bring to a boil over high heat. 
  3. Cook potatoes 10 to 15 minutes, or until fork-tender; 
  4. drain well and allow to cool slightly.
  5. In a large bowl, combine remaining ingredients; mix well. 
  6. Add potatoes and mix until well combined. 
  7. Serve warm, or cover and chill until ready to serve.
