INGREDIENTS:
Sauce:
- 4 cups blueberries
- 2/3 cup honey
- 1/2 cup tomato sauce
- 1/2 cup spring onions, chopped
- 1 tbsp ginger, grated
- 2 tsp lime juice
- 1/2 tsp mustard powder
- 2 x 450g (one pound each) pork tenderloins
- salt and black pepper, to taste
INSTRUCTIONS:
- Combine all the sauce ingredients - blueberries through mustard powder - in a medium saucepan - bring to the boil whilst stirring - reduce heat, cover and simmer until thickened, about 30 minutes (stir regularly) - remove from heat and divide between 2 bowls.
- Pre-heat grill to medium heat.
- Season the pork to taste with salt and pepper - brush with the one bowl of Blueberry-BBQ Sauce and cook 10 - 15 minutes or until done - brush with the sauce after every turn - set aside to rest 5 minutes.
