- 5-6 pound pork shoulder (also called Boston Butt)
- 1 tablespoon garlic paste
- 2 teaspoons salt
- 2 teaspoons cumin
- 2 teaspoons paprika
- 2 teaspoons oregano
- 2 teaspoons cinnamon
- 2 teaspoons black pepper
- ½ teaspoon cayenne
- ½ teaspoon chili powder
- 1 12-ounce bottle of dark beer or stout
- ⅓ cup lime juice
- ⅓ cup Midtown Olive Oil Serrano Honey Vinegar
- ¼ cup orange juice
- corn or flour tortillas
- Quick & Easy Magic Green Sauce
- fat-free sour cream or Greek yogurt
- shredded red cabbage
- sliced jalapeƱos
- lime wedges
INSTRUCTIONS:
- Measure all the spices & garlic paste in a bowl (a). Mix all the spices together into a paste (b).
- Rinse the pork shoulder, then place it in the insert of a slow cooker. Spread the paste over the meat...do not worry if some falls off the meat. Pour in the beer, lime juice, orange juice &Serrano Honey Vinegar. This can be done a day ahead, if you desire.
- Slow cook the pork on low for 8 hours, turning once about halfway through, if you're home...if not, no worries...the pork shoulder will turn out just fine. After 8 hours, the meat will pull completely away from the bone.
- Using a really large slotted spoon, lift all the meat from the braising liquid. Place into a bowl & allow to cool for a few minutes. Shred the meat into bite-size pieces. Set aside.
- While the meat is cooling, reduce the braising liquid by at least half. Use a spatula to scrape the sides to keep all the delicious tidbits in the braising liquid.
- Transfer the shredded pork to the reduced braising liquid, stirring to coat the meat. Keep the meat on warm until ready to serve.
- When ready to serve, preheat your oven to 500˚. Line a large rimmed baking sheet with aluminum foil. Spread the shredded pork in a single layer, then pour the braising liquid over the meat.
- When the oven is ready, broil the meat for 5-8 minutes. Broiling will render the fat & make the meat deliciously crispy.
- Serve the pork carnitas with flour or corn tortillas, Quick & Easy Magic Green Sauce, fat-free sour cream or Greek yogurt, shredded red cabbage, sliced jalapeƱos & lime wedges...enjoy!
