- 1 14-ounce package of mung beans
- 6 cups water
- 1 tablespoon extra virgin olive oil
- 1 medium sweet onion (finely chopped)
- 1 teaspoon garlic (finely chopped)
- 2 medium tomatoes (coarsely chopped)
- 4 cups vegetable broth
- 2 cups prawn broth
- 2-3 cups spinach or arugula leaves
- Salt and pepper to taste
INSTRUCTIONS:
- Soak the mung beans in water at least 8 hours or overnight.
- Drain the mung beans and set aside.
- Saute the onions on high heat until it starts to caramelize about 2 minutes. Add the garlic and saute for 1 minute. Then add the tomatoes and toss for 1 minute.
- Add the mung beans, vegetable broth and prawn broth. Lower the heat to medium low and simmer for 30 minutes or until the mung beans are tender.
- Turn off the fire. Add the spinach or arugula and stir gently.
- Add salt and pepper to taste. Serve immediately. Enjoy!
