Mung Bean Soup (Ginisang Mongo) Recipe





INGREDIENTS:

  • 1 14-ounce package of mung beans
  • 6 cups water
  • 1 tablespoon extra virgin olive oil
  • 1 medium sweet onion (finely chopped)
  • 1 teaspoon garlic (finely chopped)
  • 2 medium tomatoes (coarsely chopped)
  • 4 cups vegetable broth
  • 2 cups prawn broth
  • 2-3 cups spinach or arugula leaves
  • Salt and pepper to taste

INSTRUCTIONS:
  1. Soak the mung beans in water at least 8 hours or overnight.
  2. Drain the mung beans and set aside.
  3. Saute the onions on high heat until it starts to caramelize about 2 minutes. Add the garlic and saute for 1 minute. Then add the tomatoes and toss for 1 minute.
  4. Add the mung beans, vegetable broth and prawn broth. Lower the heat to medium low and simmer for 30 minutes or until the mung beans are tender.
  5. Turn off the fire. Add the spinach or arugula and stir gently.
  6. Add salt and pepper to taste. Serve immediately. Enjoy!
