for the sauce >>
INSTRUCTIONS:
- tofu - approx 200g cut into cubes
- corn flour/corn starch - 2 tbsp
- red chili powder - ½ tsp
- pepper powder - ½ tsp
- salt to taste
- oil - 2 tbsp
- red onion medium sized - 1 chopped into 1 inch pieces (or use spring onion whites/shallots)
- green bell pepper (green capsicum), chopped into 1 inch pieces - ½ to 1 cup
- red bell pepper (red capsicum), chopped into 1 inch pieces - ½ cup
- garlic - 2 cloves chopped fine
- ginger, finely chopped - 1 tsp
- green chili, finely chopped - 1 tsp
- celery, finely chopped - 1-2 tsp (optional)
- soy sauce - 1 &1/2 tsp
- tomato ketchup - 1 & ½ to 2 tbsp
- red chili powder - ½ tsp
- pepper powder - ½ tsp
- corn flour/corn starch - 1 tbsp
- salt as needed
- water
- sliced spring onion - 1-2 tsp for garnish (optional)
- first, chop your vegetables, onion, ginger, garlic. keep them ready.
- next, chop the tofu into cubes, transfer them to a bowl.
- to this add 2 tbsp corn flour, ½ tsp red chili powder, ½ tsp pepper powder, salt to taste.
- toss gently or mix.
- heat the oil in a pan.
- add tofu cubes, turning them every so often to pan fry them all round. do not over fry.
- transfer these onto a paper towel.
- in the same oil, once heated, add chopped onion, garlic, ginger, celery, green and red peppers.
- stir fry at med-high to high heat, tossing them or stirring them.
- the add soy sauce, tomato ketchup, mix.
- in the bowl used for spicing up the tofu, if there is left over flour; add ¼ cup of water to this and make a slurry. if not much flour has remained, add 1 tbsp additional corn flour, add water. mix.
- add this into the pan, stir and cook. the sauce will thicken and the raw corn flour smell will disappear.
- now add ½ tsp red chili powder, ½ tsp pepper powder. mix.
- now add pan fried tofu, salt to taste. toss or mix gently.
- cook for another minute.
- serve hot.
