- 1 whole chicken, cut into pieces
- 1 small bunch fresh tarragon
- 1 head garlic, cloves peeled and separated
- Olive oil
- Salt and pepper
- Preheat oven to 375 degrees.
- Underlay skin of chicken with tarragon and garlic cloves. Drizzle olive oil over chicken and rub into skin. Salt and pepper generously. Bake for 1 hour, basting every 15 minutes.
