Marinade
- 1 cup red wine
- dried oregano
- salt
- 1lb (500g) lean beef (your choice) cut into bite size pieces
- 1 med onion
- 4 cloves of garlic
- 2 bay leaves
- 1/2 lb (250g) fresh tomatoes (steamed 2 min) then pealed & chopped
- 12oz (350g) can of whole button mushrooms
- 1 small can of green peas
- 2 med potatoes quartered
- 2 med carrots cut into thick slices
- 1 cup of water
- Salt & Pepper
Marinade
- Mix together the marinade ingredients
- place beef in marinade container for 6-8 hours
- Fry garlic & onions in a frying pan until fragrant
- Add the marinaded beef and cook till brown
- Add the fresh chopped tomatoes & simmer for 5 min
- Add the rest of the marinade & boil for 2 min
- Add the water and bay leaves
- simmer until the beef is almost done
- Add the mushrooms, potatoes, green peas, & carrots. Cook until vegetables are done
- Season with salt & pepper
- serve with rice
