Filipino Beef Stew Recipe


INGREDIENTS:

Marinade

  • 1 cup red wine
  • dried oregano
  • salt
Beef Stew
  • 1lb (500g) lean beef (your choice) cut into bite size pieces
  • 1 med onion
  • 4 cloves of garlic
  • 2 bay leaves
  • 1/2 lb (250g) fresh tomatoes (steamed 2 min) then pealed & chopped
  • 12oz (350g) can of whole button mushrooms
  • 1 small can of green peas
  • 2 med potatoes quartered
  • 2 med carrots cut into thick slices
  • 1 cup of water
  • Salt & Pepper

INSTRUCTIONS:

Marinade
  1. Mix together the marinade ingredients
  2. place beef in marinade container for 6-8 hours
Beef Stew
  1. Fry garlic & onions in a frying pan until fragrant
  2. Add the marinaded beef and cook till brown
  3. Add the fresh chopped tomatoes & simmer for 5 min
  4. Add the rest of the marinade & boil for 2 min
  5. Add the water and bay leaves
  6. simmer until the beef is almost done
  7. Add the mushrooms, potatoes, green peas, & carrots. Cook until vegetables are done
  8. Season with salt & pepper
  9. serve with rice
