Butternut Squash Bacon Bites Recipe







INGREDIENTS:

  • 1 cup roasted butternut squash (I roasted mine at 375 for 40 minutes and using a fork, scraped out the insides)
  • 1/2 red onion finely chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon smoked paprika
  • 2-3 cloves garlic according to your preferences
  • 2 pieces cooked bacon
  • 1 teaspoon parsely chopped up
  • 3 tablespoons almond meal
Butternut Squash Bacon Bites Recipe

INSTRUCTIONS:
  1. Preheat your oven to 400 degrees
  2. Add butternut squash, red onion, garlic, salt, pepper, smoked paprika, parsely and bacon to a bowl and, using a spoon, mix ingredients till well mingled
  3. Add in the almond meal and mix well
  4. Then, using your hands, roll into bites sized balls/bites
  5. Place on a parchment lined and sprayed baking sheet and bake for 30-35 minutes.
