Lomi Recipe




INGREDIENTS:

  • 2 tbsp cornstarch, dissolved in 1/2 cup water
  • 1 250g-pack pre-sliced vegetables
  • 1 500g-pack Lomi noodles
  • 2 tbsp cooking oil
  • 4 tbsp fish sauce
  • 2 cloves garlic, finely chopped
  • 1 medium-sized onion, chopped
  • 1/4 kilo chicken breast, cut into bite-sized cubes
  • 10 pcs squid balls, cut into round slices
  • 1 pc Knorr chicken cube
  • pepper to taste
  • 5 cups water

INSTRUCTIONS:
  1. Wash lomi noodles under running water and set aside.
  2. In a casserole over medium heat, add oil and sauté garlic until golden brown.
  3. Add in the onion and cook until translucent.
  4. Add the chicken and cook until slightly brown.
  5. * Chicken liver (1/4 kg cut into bite-sized cubes) may also be added in.
  6. Add the squid balls shortly after, stir, and add in the fish sauce, pepper, and chicken cube. Kikiam is also a good substitute for the squid balls. :)
  7. Be sure not to stir and let the fish sauce evaporate first.
  8. * Let it simmer for couple of seconds until the fish sauce evaporates. This way we can get rid of the fishy taste and smell and be left with the fish sauce's flavorful taste. :)
  9. Once the smell of the fish sauce is evident, give it a good stir and add in the lomi noodles.
  10. Add in the water, stir, cover, and bring to a boil.
  11. Add in the corn starch mixture, stir, cover, and simmer until the noodles are cooked.
  12. * You'll know that the noodles are cooked when it becomes a little translucent and when it somehow doubled in size. Taste test will also be a good indicator. Take a piece of the noodle and if it's soft to the bite, then you're good to go.
  13. * You may always add in a dash of salt depending on your desired saltiness. Adding/reducing a cup of water or two may also be done depending on your desired soup consistency. For a yummier treat and a thicker soup consistency, crack an egg over the soup and stir with fork. :)
  14. Once the noodles are cooked, add in the veggies, cover and simmer for a minute or two, again depending on how well-cooked you want the veggies to be. 
  15. Remove from heat and transfer to a clean serving bowl. Serve hot and enjoy!
  16. * Hard boiled eggs may also be added to the soup. Hard boiled egg slices also make a perfect topping. You may also choose to top the soup with crushed chicharon for a more delectable treat. 
  17. * Pepper or soy sauce may also be drizzled over the hot soup, but I like eating my lomi with fresly-squeezed calamansi juice! Yummy!
