Chicken Liver Igado Recipe

INGREDIENTS:
  • ¼ kilo chicken liver
  • 1 pc. large carrot, julienned
  • 10 pcs. baguio beans, julienned
  • 1 large onion, minced
  • 3 cloves garlic, pounded then minced
  • chili flakes, optional
INSTRUCTIONS:
  1. Marinate chicken liver to what I called an ‘adobo marinade’ which is basically a mixture of soy sauce, vinegar, ground pepper and sugar 
  2. Saute onions and garlic until translucent and fragrant 
  3. Add chicken liver (set the marinade aside) and cook until well done
  4. Add vegetables 
  5. Add remaining marinade and half cup of water
  6. Add salt and pepper to taste
  7. Once sauce has reduced, turn off the heat to avoid overcooking the vegetables 
  8. Serve in a bowl and sprinkle chili flakes on top
